1/2 large cucumber quartered, and then sliced
1 small green pepper, diced
1/2 red onion, chopped
2 garlic cloves, minced
1/4 C. chopped fresh basil
1/4 C. chopped fresh parsley
1 tbsp extra-virgin olive oil
1 tbsp basamic vinegar
salt and freshly ground pepper
Mix first 4 ingredients in a large bowl. Mix remaining ingredients in a small bowl, and pour over veggies. Mix well. Refrigerate for at least an hour.
